Let's shake up the New Year with a Stupendous Strawberry Shake!

(Makes about 850 ml)

125 ml cold whole / lowfat milk
28 gm strawberry jam/ preserves
1 teaspoon freshly squeezed lemon juice
340 gm strawberry ice-cream softened until just melty at the edges
340 gm strawberry sorbet softened until just melted at the edges

1.Place the milk, jam and lemon juice in a blender and blend to mix thouroughly, about 15 secs.
2. Add the ice-cream and sorbet and pulse several times to begin breaking them up. With the blender motor off, use a flexible spatula and mash the mixture down into the blender blades.
3.Continue pulsing, stopping, and mashing until the mixture is well blended, thick and moves easily in the blender jar, roughly 30 to 90 secs.
4.Pour into a chilled glasses and serve at once.

Here's a recipe you can whip out for your family for this holiday! Impress your family and friends with this simple yet mouth-watering dessert.

Cookies with Berries and Cream (serves 6 lucky people)

185g plain flour
40g icing sugar
125g unsalted butter, chilled and chopped
1 egg yolk
1 tablespoon lemon juice
375ml whipping cream
1 teaspoon vanilla essence
1 tablespoon icing sugar, extra
400g mixed berries

1. Preheat oven to 160 degrees celcius.
2. Grease two baking trays and line with baking paper.
3. Sift the flour and icing sugar into a bowl.
4. With your fingertips, rub the butter into the flour until fine and crumbly.
5. Make well in the centre, add the egg yolk and lemon juice and mix to a dough with a knife.
Gather into a ball, cover and refrigerate for 15 mins.
6. Divide the dough in half.
7. Roll out one half between well-floured sheets of baking paper to 3mm thick. Slide the pastry onto a tray and refrigerate for 5-10 mins.
8. Using a 3 inch round or heart-shaped biscuit cutter dipped in flour, cut out nine shapes. Carefully place on the prepared trays, prick with a fork and refrigerate for 10 mins.
9. Bake for 20-25 mins or until biscuits are firm, but not coloured. Allow to cool slightly on the tray before transferring to a wire rack to cool completely. Repeat with the remaining dough.
10. Whisk the cream,vanilla and extra icing sugar together until firm. Spoon or pipe the cream mixture on top of six of the biscuits. Top with some berries.
11. Add a second biscuit and repeat with the cream and berries. Finish by adding a third biscuit to the top.Lightly dust with icing sugar.

Fabulous Treats for Everyone

Milk Chocolate Cookies (makes 36)
Oversized and slightly underbaked

Ingredients:
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon coarse salt
8 ounces milk chocolate ( 4 ounces coarsely chopped, 4 ounces cut into 1/4 inch chunk)
1 stick unsalted butter
1 1/2 cup sugar
2 large eggs
1 teaspoon vanilla essence

1.Preheat oven to 170 degrees celcius.
2.Whisk together flour, baking soda, cocoa powder and salt.
3.Melt 4 ounces coarsely chopped chocolate with butter in heatproof bowl set over pan of simmering water, and let it cool slightly.
4.Put chocolate mixture,sugar,eggs and vanilla in the bowl of electric mixer. Mix on medium speed until combined.
5.Reduce speed to low and gradually mix in the flour.
6.Fold in chocolate chunks.
7.Using 1 1/2 inch ice-cream scoop, drop dough into parchment paper-lined baking sheets 2 inches apart. Bake until cookies are flat and surfaces crack for about 15 minutes (cookies should be soft).
8.Let cool on parchment on wire racks.

Sweet Fantasy

Hi All, I will be updating Recipes to share with all of you. So do keep a lookout and enjoy baking it during your own free time and I hope you enjoy yourself!


Double Chocolate Brownies
(makes 9 large / 16 small)
*For all you fudgy brownies fans, you can prepare this for your guest at a party or even pack it along in your picnic basket!

Ingredients:

6 tablespoons unsalted butter
6 ounces semi-sweet chocolate (coarsely chopped)
1/4 cup unsweetened Cocoa Powder (Dutch process)
3/4 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
2 large eggs
2 teaspoons vanilla essence

1.Preheat oven to 180 degrees celcius. Line 8 inch square baking pan with parchment paper allowing 2-inch overhang( for easy removal).Butter the lining.
2.Put butter, chocolate and cocoa powder in heatproof bowl set over a pan of simmering water (double boiler), stir until butter and chocolate have melted. Allow to cool slightly.
3.Whisk together flour, baking powder, and salt in a bowl. Put sugar,eggs,vanilla in the bowl of electric mixer and mix on medium speed until pale about 3-4 mins. Add the chocolate mixture and mix till combined.
4. Reduce speed to low,add flour to mixture and mix till well combined.
5.Pour batter into prepared pan.Bake until cake tester inserted comes out few crumbs but not wet,about 35 mins.
6.Let cool slightly on wire rack before cutting to squares.
Brownies can be stored in airtight container at room temp up to 3 days.
